Kadai paneer is a flavourful dish, the aroma of the spices and the colors draw you towards the food. It’s easy and a quick recipe. The basic recipe is from Sanjay Thumma of Vahrevah.com. I have made few changes to suit our taste.
Ingredients
250 gm Paneer(cottage cheese)
1 table spoon coriander seeds
½ tea spoon cumin
10 pepper corns
2 teaspoons fennel seeds
1 tomato (pureed)
2 table spoons butter/oil
½ cup yogurt
1 red capsicum
1 green capsicum
1 onion
2 tea spoons kasuri methi(dried fenugreek leaves)
1 teaspoon garam masala powder(I like Everest brand)
2 teaspoons chilli powder
2 table spoons of chopped coriander leaves
Cut the paneer into 1 inch cubes. Chop the vegetables into 1 inch cubes. Roast the vegetables on iron pan with a table spoon of oil for few min. It adds flavor.
Dry roast the spices-coriander, cumin, fennel, pepper. Use a mortar and pestle to powder the dry spices. Make it bit coarse.
Heat butter/oil in a pan. Add ½ of the spice powder, garam masala, and chilli powder. Stir it, add vegetables, paneer, tomato puree and curds, dried fenugreek leaves, and coriander leaves. Cook for 3-4 minutes. Add the rest of the spice powder and mix it well. Serve it with rice/roti/naan.
