This is a must try recipe. Easy and yummy prawns; the dish brings out the flavor of herbs very well. It goes well with pasta or daal rice. We make it as a starter too.
30 medium size Prawns
5 -6 small green chillies (spicy)/1 jalapeno pepper
1 cup coriander leaves
8 garlic cloves
1 inch piece ginger
1 teaspoon rosemary either fresh or dried
6 basil leaves/ 1/2 teaspoon dried basil
3 table spoons Extra Virgin olive oil
salt to taste
1 teaspoon lemon juice
Clean the prawns, remove its shell and devein them. Grind all the ingredients other than oil and lemon juice into a smooth paste. Marinate the prawns with the paste and salt for half an hour.
Heat olive oil, add the prawns marinated, cover and cook for 5 minutes. Open the lid, Stir it uncovered until the water evaporates and becomes dry. If you would like you can add 1 tablespoon of olive oil while stir frying (optional). Add lemon juice and mix well. Serve it with pasta or daal rice or as a starter.
