This is a very common breakfast item found in Indian homes. Quick to prepare and can be packed for lunch too. I like the flavors of onion, coriander leaves and the tangy taste of lemon in this.

Ingredients
1 cup Thick poha/beaten rice
2 medium size onions
1 big potato/2 medium sized
1 teaspoon mustard
4 Green chillies chopped fine
6 curry leaves chopped into halves
¼ cup coriander leaves chopped fine
1 teaspoon turmeric
2 teaspoons lemon juice
4 tablespoons oil
salt to taste
Method
Soak the beaten rice in water for 20 min. If you are able to cut the poha it is soaked enough. Take out the poha by hand, squeeze the water out and place it in a bowl.
Chop onions into small squares.
Pierce the potato with a knife all over and Microwave for 5-6 minutes. Peel the skin and chop into small cubes. If you don’t want to microwave, chop potato into small pieces and cook with half glass of water. It cooks within 8-10 min. Take out the potato pieces and discard the water.
In a deep pan heat 4 tablespoons of oil on medium heat. Add mustard, when it splatters add chopped green chillies and chopped curry leaves. Fry them for a minute. Add turmeric and stir. Add onions and fry them till they are translucent. It takes about 7 minutes. Add the soaked poha, potato pieces , salt, lemon juice and coriander leaves. Mix it well. Cover it and cook for 5-7 minutes. Check the salt. Serve it warm with a cup of tea/coffee.
