Linguini aglio e olio with Prawns

shrimp pastaThis is a traditional Italian pasta dish. We love prawns so I am adding it. Just the pasta is also very flavorful. Few ingredients and it makes a great dish for meal.

 

Servings 2

Ingredients for making pasta

½ packet of Linguini (1 packet =16oz)

¼ cup Extra Vergin Olive oil

¼ cup finely chopped parsley

4 cloves of garlic finely sliced

salt to taste

½ teaspoon red chilli flakes

¼ cup grated parmesan cheese (optional)

2 teaspoon lemon juice

 

Method

Cook Linguini according to the instructions on packet, al dente. Reserve ½ cup of pasta water.

Take a wide pan, heat olive oil, add finely sliced garlic and fry till golden, add linguini cooked and add chopped parsley, stir it for a minute. Add the pasta water. Cook until the water gets absorbed.  Add lemon juice. Check salt, add if needed. Sprinkle red chilli flakes and parmesan cheese. Serve hot.

For prawns
15 cleaned and deveined prawns

3 table spoons butter

3 garlic cloves finely chopped

½ teaspoon red chilli flakes

few parsley leaves chopped

1teaspoon lemon juice

salt to taste

Heat butter in a pan, add garlic chopped, sauté till golden. Add chilli flakes and prawns. Add salt and cook for 2-3 min. The prawns turn pink and curves. Add few parsley leaves and lemon juice. Stir it and serve it with linguini. Enjoy.

Notes: If parsley is not available coriander leaves/cilantro can be used in its place as an alternative.
